Woodcock Smokery - Leviathan Chapter 1
I am delighted to share the first episode of Leviathan, a brand new video series that explores crafting, music and culinary culture across Ireland.

Leviathan tells the stories of wild food foragers, artisan makers, organic farmers and other creatives who are deeply connected with the country's heritage and traditions.

In it I meet the legendary Sally Ferns-Barnes of Woodcock Smokery, a key figure in Ireland's food renaissance of the last forty-plus years, as well as a lifelong campaigner for ocean conservation. She is also the only remaining person in the country who exclusively cures and smokes wild fish in the traditional ways.
With an in-depth interview, Sally shares her knowledge from The Keep, her educational space nestled in the hills of West Cork, showing me how to fillet, prepare and smoke albacore tuna and wild salmon. She shares her insights about the current state of Irish waters and what steps she believes need to be taken to ensure a sustainable future.
I am also joined by Medazza, a group of local singers who share songs about the sea in Irish and English.
It’s been a long road from concept to shooting to release. As an independent production it has not been without its challenges, but the whole process has been extremely rewarding.
